Enchiladas

A staple on any Mexican combination plate, enchiladas are typically made with corn tortillas dipped in oil to soften, lightly sautéed, rolled with a filling of meat, cheese, or vegetables, then drenched in a red or green sauce and briefly baked. Enchiladas suizas are made with cheese and cream and enchiladas mole feature Mexican mole sauce. Usually served with rice and beans they are a delicious comfort food from South of the border. Enchilada recipes are surprisingly easy and quick to make, especially if you use canned sauce.
