Chicken Salad

What popular lunch item is as happy in a sandwich as on a bed of lettuce? Chicken salad, of course. One of the best ways to use leftover roast or poached chicken is to shred or cube it and toss it with mayonnaise or a vinaigrette to make a delicious cold salad. Fruit and/or vegetable additions like grapes, apples or raisins, onion and celery help to stretch the chicken and embellish the dish. Popular seasonings for chicken salad include tarragon, curry, and soy sauce for Chinese-style chicken salad.
