Chicken Marsala recipe

Chicken Marsala is a popular variation of the classic dish, veal Marsala. Thin scallops of chicken are quickly sautéed and then simmered in Marsala, a fortified wine from Sicily. The dish is finished with butter and a pinch of parsley. Rich and smoky, Marsala can be dry or sweet. A drier style Marsala is recommended for this dish. Sweet Marsala is a dessert wine and is typically used in the Italian dessert, zabaglione.
