Broccoli

A member of the cabbage family and a cool-weather crop, broccoli is generally available year round and a great source of vitamin C, riboflavin, calcium, and iron. Kept in the refrigerator, it stays its freshest for up to four days, though it can linger in the crisper longer before use. Steam, stir-fry, or blanch broccoli and serve with sauce or prepare it the Italian way with lemon, garlic, and a light drizzle of olive oil to enhance its natural flavor.
