Asparagus

Asparagus contains vitamins A, B, C and has a fair amount of iron. In Europe the white variety is much prized, but in the U.S. it is most commonly green. It.s delicious served hot or cold, and its elegant shape make it a popular addition to brunches and luncheons. Fresh asparagus is easily prepared by steaming, boiling, saut??g, or roasting; just don’t overcook it or it may become bitter and mushy.
