Ham

All kinds of ham are popular the world over, from the prosciutto of Italy to the black forest ham of Germany to the Yunnan ham of China. In the U.S. there are two main types to choose from: city ham and country ham. City hams are brined then either boiled or smoked. Country-style hams are dry cured and then smoked and aged. While ham is traditional for holiday meals, the leftovers make not only great sandwiches but great filling for crepes and pasta or in casseroles.
