Cream puffs are made from pate choux pastry and can be filled with sweetened whipped cream, custard, or savory fillings. They are airy and light and surprisingly easy to make. The pastry is made by cooking flour, salt sugar, water or milk, and butter in a pan. The dough comes together into a thick paste and eggs are beaten into it. A spoon or a pastry bag can be used to form different shapes which puff when baked in the oven. They should be firm to the touch and cool before filled.
