Corn pudding recipe

When corn is fresh and sweet it’s great on the cob. For a more sophisticated dish, corn pudding combines fresh corn with eggs, butter, and sometimes milk or cream. It’s creamy rich and can be in the style of a custard or a soufflé. It’s great as a summertime side dish to serve with barbecue or at a potluck. In some parts of the country corn pudding is served at Thanksgiving. When fresh corn is not in season use the sweetest canned or frozen corn you can find.
