Though carrot cake has roots that go back to the medieval period, the 1960s and 1970s are really when it became very popular. A soft cake flecked with shredded carrots, which add sweetness, color, and texture, it can also include raisins or pineapple and is usually topped with a luscious cream-cheese frosting and chopped walnuts.
