Cajun and Creole are two cooking styles often confused with each other. Cajun is a French- and Southern-influenced country cooking style, created by the descendents of French Acadians who resided in Canada. Cajun food is often spicy and uses a roux as a sauce base. A typical Cajun dish is jambalaya. Creole cooking has elements of French, Spanish, and African cuisine, and its most famous dish is gumbo.
