Caesar Salad

An Italian chef, Caesar Cardini, invented Caesar salad at a restaurant in Tijuana in the 1920s. Over time the recipe has changed and arguments ensued over the ingredients such as anchovies and whether the leaves of Romaine lettuce should be served whole or in pieces. One thing’s for sure, any salad made with Romaine lettuce, parmesan cheese, croutons, and a dressing with garlic, lemon juice, and Worcestershire sauce is sure to be a hit. No wonder today’s Caesar salad recipes include Southwestern  and Italian versions. For a fun picnic side dish, try a Caesar dressing over slaw.
