Healthy and inexpensive, cabbage is a good source of vitamin C, vitamin K, fiber, iron, calcium, and potassium. It is also low in calories. Cabbage soup recipes have been around for a long time, but it’s only recently that a cabbage soup diet made this dish even more popular. Cabbage is used in soups in Asia, and Europe.
