Butternut squash soup recipe

 Butternut is one of the most popular types of hard skinned winter squash. It is generally available all year round. Cooked butternut squash can be pureed in the blender to make a creamy textured soup that is healthy and delicious. Peeling butternut squash can be a chore. Cut it in half and put the two halves in a glass container with 1/2 cup water and microwave for 10 minutes or until soft and then scoop out the flesh to use in soup.
