Butternut Squash

Butternut squash is one of the most commonly available winter squashes and is a particularly good addition to soups. It has a mild flavor, which is similar to sweet potatoes or pumpkin, and roasting helps to intensify its flavor and texture. To cook butternut squash in a hurry, cut it in half and place it in a glass dish, cover with plastic wrap, and microwave. A two-pound squash should cook in just over 10 minutes.
