Beef stroganoff is named for a member of the Russian Stroganov family, possibly the diplomat Count Paul Stroganov and dates back to the 19th century. While original recipes call for lightly floured cubes of beef sautéed, sauced with prepared mustard and bouillon, and finished with a small amount of sour cream. Current recipes often include onions and mushrooms. Beef Stroganoff is commonly served with rice or wide egg noodles.
