Beans are generally inexpensive, versatile, and nutritious. They are high in protein, calcium, phosphorus, and iron. Pinto, garbanzo, white, and black beans are conveniently available in cans as well as in bulk. If you buy them dried, you’ll generally need to soak them a few hours or overnight before cooking them. To broaden your appreciation for beans, look for heirloom and heritage varieties such as cranberry, scarlet runner, flageolet, calypso, and Anasazi beans.
